COOKERY COURSE PROGRAM ON HERBS AND SPICE IN SOUTH OF FRANCE NEAR MONTPELLIER

The 1ST weekend of the month is the Marco Polo course for interested amateurs. "beginner" cooks are also welcome.
We look at 40 spices and flavors. We prepare some simple quick recipes which take less than15 minutes of preparation.
We review at least 25 recipes. Cost is 90 €.
With aperitif, dinner and drinks the cost is €120.
Starts on Saturday at 14.00 and finishes around 23.00

The 2nd week end of the month is the Marco Polo or the Ali Baba course. The 40 spices of the Ali Baba are different to those used in Marco Polo. Cost is 90 €.

The 2nd and 3rd weekend of the month is the Vasco de Gama course with 80 spices which lasts for two days, from Saturday lunch through the end of Sunday afternoon.
Cost is € 280 per person and includes one night in a double room, 4 meals and drinks. For partners the cost is € 120. We review between 50 and 60 recipes.
On the 2nd weekend of the month the Vasco de Gama students could be mixed with the Marco Polo students on the Saturday.

The 4th weekend of the month is the Magellan course, or a themed course. Magellan runs from Thursday evening through to Sunday evening. We spend half the time on spices, and the other half discovering the region. Cost is € 480 per person or € 700 per couple and includes 3 nights’ accommodation, 9 meals and drinks. Excursions not compulsory with a dinner at restaurant near the sea are extra (€ 60 per person).

Theme courses are to order and by reservation ( 6 people minimum).
They run for 2 full days from Friday evening through to the end of Sunday afternoon.
Cost is € 350 to € 380 depending of ingredients used on the course. 2 nights’ accommodation, 6 meals and drinks are included. Cost is € 650 per couple.
NB an aphrodisiac course is planned around mid February every year, from Friday evening through the end of Sunday afternoon . Cost is € 650 per couple.

1. Bouillabaisse.
2. An introduction to Italian food. Antipasti, the main pasta sauces : pesto, arrabiata, tomato ‘ragu’ simmered for 2 hours, amatriciana “roman” style, seafood, squid ink. The true Tiramisu with chocolate savings and Amaretto.
3. Ten recipes for healthy and tasty every day eating.

6. An introduction to Chinese cooking – Peking, Cantonese, Sichuan, Shanghai.

10. The cabbage- stuffed cabbage, borsch and cabbage salads.

12. Salmon and Tuna: Salmon – marinated raw, smoked, sushi, Swedish style – Tuna – tartar, in steaks with sweet or hot spices.
13. Introduction to Indian cooking – biryani, lassi, nan bread, tandoori and curries.

Magellan is three days and three nights with half of the time devoted to cooking
And the other half spent exploring the region
